The reason this works is because nitrous oxide forms within a narrow temperature range within the cylinder. By lowering the temperature of the combustion chamber, the amount of nitrous oxide is reduced. Unfortunately, this comes at a cost in engine efficiency. Nonetheless, it is better for the environment because the overall process reduces the amount of air pollution coming out the tailpipe.
